Pasta with Zucchine Recipe

🍝 Ingredients

  • 80g Bucatini pasta, snapped in half
  • 1 courgette (zucchina), sliced thin
  • ½ onion, finely chopped
  • 1 sprig of rosemary
  • Olive oil (for sautéing)
  • Salt and pepper to taste
  • Grana Padano cheese (for topping)

🔪 Instructions

  1. Slice the courgette thin, chop the onion finely, and snap the bucatini in half.
  2. In a pan, heat a drizzle of olive oil. Add the onion and rosemary and sauté for 2 minutes. Add the courgette and cook until soft and slightly golden.
  3. In salted boiling water, cook the bucatini until al dente. Drain and reserve a bit of cooking water.
  4. Add the cooked pasta to the pan with courgettes. Stir together, adding a splash of pasta water if needed. Season with salt and pepper.
  5. Plate and top generously with grated Grana Padano and a drizzle of Olive oil.
