This classic Italian pasta is simple, comforting, and quick. Perfect for a weeknight dinner with fresh basil and a rich tomato sauce.

Fusilli al Pomodoro Recipe

🧾 Ingredients

  • 160g of pasta (dry) – I’ve used fusilli pasta
  • 1 tbsp olive oil
  • 1 small garlic clove
  • 200g canned chopped tomatoes (or passata)
  • Salt and black pepper, to taste
  • Some fresh chillies (optional)
  • Fresh basil leaves, a few (optional)
  • Grated Grana Padano or vegan alternative (optional)

🔪 Instructions

  1. Bring a pot of salted water to a boil and cook fusilli according to package instructions (usually ~10 min).
  2. While the pasta cooks, heat olive oil in a pan over medium heat.
  3. Add garlic and sauté until fragrant, ~30 seconds.
  4. Add some chillies for a little pinch
  5. Pour in the tomatoes. Simmer for 10 minutes, stirring occasionally. Season with salt, pepper, and a pinch of sugar if too acidic.
  6. Drain pasta, then add it to the sauce. Toss to coat evenly.
  7. Garnish with torn basil and Grana Padano if desired. Serve hot.
