Baked spinach enriched with butter, garlic, and chorizo, topped with Grana Padano and finished in the oven.

Ingredients

  • 1.5kg Fresh Spinach
  • 80g Butter
  • 30g Chorizo (or Pancetta)
  • 50g Grana Padano, grated
  • 1–2 Garlic Cloves
  • Salt & Pepper, to taste

🔪 Instructions

  1. Trim spinach roots, rinse well, boil briefly in salted water.
  2. Drain, rinse under cold water, then squeeze until dry.
  3. In a pan, melt 50 g butter, add garlic + chorizo/pancetta, brown lightly, then remove.
  4. Add spinach, sauté for a few minutes, adjust seasoning.
  5. Drizzle with remaining butter, sprinkle with Grana Padano.
  6. Bake in a hot oven until golden and fragrant.
