A moist and flavorful cake infused with apple, cinnamon, and crunchy walnut.

  • 180 g flour
  • 7 g yeast
  • 3 eggs
  • 170 g sugar
  • 150 g butter or margarine (melted)
  • 1 pinch of sodium bicarbonate
  • 200 g grated apples
  • 1 tbsp raisins or sultanas
  • 50 g walnuts, crushed
  • 1 pinch of cinnamon
  • White Chocolate icing

  1. Mixing bowl
  2. Kitchen scale
  3. Mesh sieve (for flour)
  4. Mortar or rolling pin (to break walnuts)
  5. Grater (for apples)
  6. Electric whisk (e.g., Kenwood โ€“ reliable and solid)
  7. Rectangular baking tray (200mm x 90mm x 60mm or 8″x3.5″)
  8. Baking parchment or tin liner

๐Ÿ”ช Instructions

  1. Preheat the oven to 180ยฐC (Gas Mark 6), top and bottom heat (no fan).
  2. In a bowl, whisk the eggs and sugar until light, smooth, and doubled in volume.
  3. Sift the flour into the mixture gradually using a mesh sieve.
  4. Slowly incorporate the melted butter, followed by the yeast and sodium bicarbonate.
  5. Add the grated apples, cinnamon, raisins or sultanas, and crushed walnuts. Mix everything thoroughly.
  6. Pour the batter into the lined baking tray and level it out.
  7. Bake for 45 to 50 minutes. Use a knife or skewer to test doneness โ€“ it should come out clean.
  8. Allow to cool and coat it with the white Chocolate icing.
