  • 2 Chicken breasts, halved horizontally (or 4 thin cutlets)
  • 4 Fresh sage leaves
  • 4 Slices of prosciutto
  • 50ml White wine
  • Salt & Pepper, to taste
  • 20ml Olive oil
  • 1 Tbsp Butter (optional, for finishing)
  • Toothpicks (for holding everything together)

🔪 Instructions

  1. Prepare the Chicken: Pound the chicken cutlets gently between parchment to make them uniform and thin. Season lightly with salt and pepper.
  2. Assemble the Saltimbocca: Place a sage leaf on each piece of chicken, followed by a slice of prosciutto. Secure everything in place using a toothpick.
  3. Pan-Sear: Heat olive oil in a large skillet over medium-high heat. Add the chicken, prosciutto-side down first, and cook for 2–3 minutes until lightly browned. Flip and cook the other side.
  4. Deglaze with Wine: Add white wine to the pan, letting it sizzle and reduce for a few minutes. Optionally, swirl in a knob of butter to create a glossy finish.
  5. Serve: Plate the chicken and spoon the reduced sauce over the top. Serve with roasted vegetables, mashed potatoes, or a fresh salad.
