  1. Prepare the Walnuts
    Boil the walnuts for 3–5 minutes. This softens them and helps remove bitterness and skins. Drain, pat dry with a kitchen towel, and let them cool. Once cooled, blend them into a creamy paste.
  2. Cook the Pasta
    Bring a pot of salted water to a boil. Cook the pasta according to the package instructions. Cooking time will vary depending on the brand and type β€” always check the label.
  3. Make the Sauce
    While the pasta cooks, heat olive oil in a pan. Add the garlic and sautΓ© until golden (watch it carefully to avoid burning). Add the chilli (if using), then immediately stir in the walnut cream.
