A deliciously creamy pasta dish made with blended walnuts, garlic, and olive oil. This recipe is simple, satisfying, and full of earthy flavor β perfect for a quick weeknight meal or a comforting weekend dinner.

- 200g Pasta – Spaghetti or Linguine
- 180g Walnuts
- 1g Garlic, minced
- 10g Parsley, chopped
- 25g Grana Padano, grated
- 20g Olive oil
- Salt and pepper, to taste
- Chillies – dry or fresh (optional)

πͺ Instructions
- Prepare the Walnuts
Boil the walnuts for 3β5 minutes. This softens them and helps remove bitterness and skins. Drain, pat dry with a kitchen towel, and let them cool. Once cooled, blend them into a creamy paste. - Cook the Pasta
Bring a pot of salted water to a boil. Cook the pasta according to the package instructions. Cooking time will vary depending on the brand and type β always check the label. - Make the Sauce
While the pasta cooks, heat olive oil in a pan. Add the garlic and sautΓ© until golden (watch it carefully to avoid burning). Add the chilli (if using), then immediately stir in the walnut cream. Season with salt and pepper. Add 2 ladles of pasta cooking water and stir to combine into a creamy sauce. - Combine Pasta and Sauce
Drain the pasta and add it directly into the pan with the walnut sauce. Mix well until the pasta is evenly coated and the sauce is creamy and smooth. - Serve
Plate the pasta and top with freshly grated Grana Padano and chopped parsley.
