🥣 Pasta with Zucchine
A simple and light pasta dish that’s quick and full of flavour.
📝Intro
This classic mamma midweek lunch dish, comforting, and quick. For extra freshness add some basil.
🍝 Ingredients
- 80g Bucatini pasta, snapped in half
- 1 courgette (zucchina), sliced thin
- ½ onion, finely chopped
- 1 sprig of rosemary
- Olive oil (for sautéing)
- Salt and pepper to taste
- Grana Padano cheese (for topping)

🔪 Instructions
- Slice the courgette thin, chop the onion finely, and snap the bucatini in half.
- In a pan, heat a drizzle of olive oil. Add the onion and rosemary and sauté for 2 minutes. Add the courgette and cook until soft and slightly golden.
- In salted boiling water, cook the bucatini until al dente. Drain and reserve a bit of cooking water.
- Add the cooked pasta to the pan with courgettes. Stir together, adding a splash of pasta water if needed. Season with salt and pepper.
- Plate and top generously with grated Grana Padano and a drizzle of Olive oil.
