Saucy tomato Pasta (Easy Week lunch and night Dinner)
📝 Intro
This classic Italian pasta is simple, comforting, and quick. Perfect for a weeknight dinner with fresh basil and a rich tomato sauce.
🧾 Ingredients
- 160g of pasta (dry) – I’ve used fusilli pasta
- 1 tbsp olive oil
- 1 small garlic clove
- 200g canned chopped tomatoes (or passata)
- Salt and black pepper, to taste
- Some fresh chillies (optional)
- Fresh basil leaves, a few (optional)
- Grated Grana Padano or vegan alternative (optional)

🔪 Instructions
- Bring a pot of salted water to a boil and cook fusilli according to package instructions (usually ~10 min).
- While the pasta cooks, heat olive oil in a pan over medium heat.
- Add garlic and sauté until fragrant, ~30 seconds.
- Add some chillies for a little pinch
- Pour in the tomatoes. Simmer for 10 minutes, stirring occasionally. Season with salt, pepper, and a pinch of sugar if too acidic.
- Drain pasta, then add it to the sauce. Toss to coat evenly.
- Garnish with torn basil and Grana Padano if desired. Serve hot.
