๐ Apple, Walnut & Raisin Cake

๐ Intro
A moist and flavorful cake infused with apple, cinnamon, and crunchy walnut.
๐งพ Ingredients
- 180 g flour
- 7 g yeast
- 3 eggs
- 170 g sugar
- 150 g butter or margarine (melted)
- 1 pinch of sodium bicarbonate
- 200 g grated apples
- 1 tbsp raisins or sultanas
- 50 g walnuts, crushed
- 1 pinch of cinnamon
- White Chocolate icing

- Mixing bowl
- Kitchen scale
- Mesh sieve (for flour)
- Mortar or rolling pin (to break walnuts)
- Grater (for apples)
- Electric whisk (e.g., Kenwood โ reliable and solid)
- Rectangular baking tray (200mm x 90mm x 60mm or 8″x3.5″)
- Baking parchment or tin liner
๐ช Instructions
- Preheat the oven to 180ยฐC (Gas Mark 6), top and bottom heat (no fan).
- In a bowl, whisk the eggs and sugar until light, smooth, and doubled in volume.
- Sift the flour into the mixture gradually using a mesh sieve.
- Slowly incorporate the melted butter, followed by the yeast and sodium bicarbonate.
- Add the grated apples, cinnamon, raisins or sultanas, and crushed walnuts. Mix everything thoroughly.
- Pour the batter into the lined baking tray and level it out.
- Bake for 45 to 50 minutes. Use a knife or skewer to test doneness โ it should come out clean.
- Allow to cool and coat it with the white Chocolate icing.
